With warmer weather on the horizon, I've been anxious to fire up the grill and make some grilled chicken. I enjoy grilled chicken because you can make a ton and use the leftovers during the week in salads and sandwiches. With this particular grilled chicken, I made an easy marinade that brings flavor to the chicken and keeps it healthy and light. Enjoy!
Ingredients
- 2 sprigs of fresh rosemary
- 2 medium size lemons
- 3 gloves of garlic
- 1 teaspoon sea salt
- 1/2 teaspoon coarse black pepper
- 1 pound boneless chicken breasts
Directions
Remove the rosemary from the stem and coarsely chop. Place in a small mixing bowl. Next, coarsely chop the garlic and add to the mixing bowl. Squeeze the juice of the two lemons in the bowl and add in the salt and pepper. Mix all together. Then, place the chicken in a baking dish and rub the marinade all over the chicken.
Cover with plastic wrap and let it marinate in the fridge for at least an hour. Last, grill your chicken for about 7-8 minutes a side on medium heat or until completely cooked through. Enjoy!
