A friend of mine recently posted a picture on Instagram of pecan crusted chicken. It inspired me to come up with my own version to share with all of you. The pecans help lock in the moisture of the chicken when baking and provide a delicious and flavorful crunch. I sliced my chicken to enjoy on top of a salad and it made a great healthy and tasty meal. Enjoy!
Ingredients:
- 1 lb chicken breast (either pound them out to thin them or cut your breast in half width wise)
- 1 cup pecans
- 1/2 cup Italian breadcrumbs
- 1/4 cup honey mustard
- 1-2 tablespoons olive oil
Directions:
- Preheat the oven to 400 degrees.
- Place the pecans in a dry skillet and toast them over medium heat for 2 minutes, stirring often. They should be golden brown and give off a toasty fragrance.
- Once the pecans are toasted, place them in a food processor and grind them into fine crumbs. Place the crumbs in a shallow dish along with the breadcrumbs.
- Rub both side of the chicken with the honey mustard. Then place the chicken in the pecan mixture, coating both sides.
- Place the chicken on a nonstick baking sheet and drizzle with olive oil. Bake for 20 minutes or until juices run clear.
- Allow to rest for 5 minutes before slicing. Enjoy!
